Higashimaru Soy Sauce has been making soy sauce for over 400 years since the Tensho era. Our light soy sauce is a soy sauce that was developed to make the most of the flavor of the ingredients, while our dark soy sauce is mild and has the flavor of soy sauce. We are also particular about the raw materials we use, and work with local contract farmers to promote local production for local consumption. Domestic bonito flakes and kelp are blended with two types of light soy sauce: Urumebushi, Sababushi, Meji Kabushi (Soda Katsuobushi), and Muro Ajibushi: light soy sauce that ``makes the best use of dashi'' and light soy sauce that ``subdues the color.'' You can easily prepare light dishes that bring out the natural flavors of the ingredients.
