This is an authentic hotpot with an elegant flavor made from two-stage grilled ago dashi carefully extracted from flying fish with little unpleasant flavor. For the hidden flavor, we use our own Aji fish sauce to create a deep flavor. To finish off your meal, we recommend adding Hakata-style udon noodles to the remaining soup. Enjoy by adding fried eggs, green onions, eggs, etc. to your liking.
