Using only soybeans and salt as raw materials, we put it in a wooden vat, and our skilled craftsmen piled up natural river stones in a conical shape to weigh it down, and we fermented it naturally for two summers and two winters (more than two years). It is characterized by a rich umami flavor and a slightly sour/astringent flavor.
