What is “early harvested mozuku”? ] Mozuku is usually harvested from March to July, but mozuku harvested at the beginning of the season is called "early harvested mozuku," and its slimy, crunchy texture is addictive. The producers, the fishermen, also swear by the fact that "early harvesting is best!" However, early-harvested mozuku is not suitable for processing such as salting or drying (it dissolves when salted), so there is still a small amount of it in circulation, making it a very valuable mozuku that has only been enjoyed by locals. We are also particular about using only fresh mozuku harvested in the Katsuren area, which boasts the largest production of mozuku in Okinawa.

How to use
